Nap trapped at Bunnings
Jan. 30th, 2023 06:25 am I had at 8am yesterday for my crazyness yesterday.
I stayed up until almost midnight, grating carrot for Wendy's bday cake (FYI always choose carrot cake if you are having it as an option. Those things are damn time consuming and hard to make). I've made them before but not with a kid to consider with scheduling.
I'm planning an epic carrot cake monstrosity that is essentially three carrot cakes in one.
I'm gonna take the lazy route and bought Betty Crocker cream cheese flavoured frosting because will you believe it there's not a shared of cheese or dairy in that frosting.
Make life easier.
So I spent an hour peeling and grating three lots of 260g of carefully weighed carrots. So that's almost 900g of carrot. That's why it took an hour. Then I packaged them carefully into zip lock bags for an when I can get time to bake.
The recipie calls for freshly grated carrot. The author states that shop bought grated carrot is dry and that reduces success of the cake to be at its peak. Well. Lady. Firstly you can't buy grated carrot at the local supermarket in Australia. Not without it being contaminated with cabbage. I think. To be fair I didn't look.
And secondly, I have to make this in parts or it just won't happen.
I spent the spare 30 mins and motivation I had this morning to weigh out three lots of dry ingredients into three zip lock bags.
Took the air out and sealed them.
This is like making home made packet mix.
I have 30 mins here or 45 mins there.
To bake this thing I essentially probably need an entire day.
Meanwhile Wendy has had vomiting on Saturday morning X1. Then again on Sunday midnight- mostly after a breastfeed strangely enough. And then right before swimming lesson one frothy yellow dihorrea that meant swimming lesson wasn't going to happen today despite us being at the pool in advance of time. I talked to the swim school.
Shortly after this post I got gastro, then Pete got it. Right after I finished baking all 3 layers of cake.
Which then made me feel guilty cause even though I know its baked fully and done and in the freezer before I started vomiting, it feels so close that I don't think i can serve gastro cake.
So I've been literally - rebaking all 3 layers (but now not in one go, now approx 1 a week.
That's how much "time" I have. I know this recipe back to front I could bake it in my sleep. and I've been munching on the gastro cake myself because, don't wanna waste perfectly good carrot cake.
